Full ingredients list:
- canola cooking spray, for greasing
- 1/2 cup reduced-fat table spread
- 1/2 cup soft brown sugar
- 3 eggs
- 1/2 teaspoon mixed spice
- 1 cup Healtheries Simple baking mix
- 1/2 cup dried apricots and cherries
- 1/2 cup chopped dates
- pinch mixed spice
- 1/2 cup apple sauce
- 2 tablespoons treacle

Instructions and steps:
Step 1 Preheat oven to 180°C. Lightly grease 6 x 10cm-round mini springform tins and line with baking paper.
Step 2 In a bowl, cream spread and sugar until fluffy. Add eggs one at a time, mixing well after each. Gently fold in baking mix, dried fruit, dates and mixed spice. Add apple sauce and treacle.
Step 3 Spoon mixture into prepared tins. Bake for 25-30 minutes, or until cakes are firm and golden on the surface. Ice as desired. (We used Lemon cream cheese icing.)
You could also use a 10-hole muffin tin and reduce cooking time by 5 minutes.
