Pasta with crumbled sausage and lemon

- 400g fresh papardelle or fettucine
- 500g lean beef sausages
- 2 cloves garlic, crushed
- 1 cup evaporated skim milk
- 1 large lemon, zested
- 1/4 cup chopped fresh parsley
- 8 cups mixed salad, to serve

Instructions and steps:
Step 1 Bring a large pot of water to the boil and cook pasta according to packet instructions. Drain, cover and set aside.
Step 2 Spray a shallow frying pan with oil and place over medium-high heat. Chop one end off each of the sausages and squeeze the meat into the pan.
Step 3 Break sausage meat up with a fork so it forms crumbly chunks. Add garlic and cook gently, stirring often, to prevent the sausage from sticking and to crumble the meat as it cooks. When the meat is well browned, pour off any excess fat in the pan and add evaporated milk. Simmer gently until reduced by a quarter, then add lemon zest and parsley.
Step 4 Combine cooked pasta and sauce and serve with green salad.
