With school going back this week, and holidays well and truly over for most of us, it got me thinking about packed lunches.
Growing up, I have clear memories of my dad making his lunches for the week – a ham, cheese and tomato roll. He ate one every day for 41 years until he retired. It’s no surprise that as a kid, I too, ate virtually the same lunch every day. It was a chicken and lettuce sandwich on brown bread. My mum would prepare it each morning and pack it next to an ice brick to keep it fresh. Admittedly, there were days that I opened my lunch box and groaned at the sight of ‘another chicken sandwich’, but for the most part, I happily ate it, and it kept me full well into the afternoon.
These days, lunch has become a much more complicated affair – from extravagant bento boxes to gourmet salads and wraps. We’re spoiled for choice and it seems the humble sandwich no longer cuts the mustard. But it should! Quick, cheap and easy to prepare, sandwiches can offer the perfect nutrient balance for midday meals.
