Versatile, inexpensive and easy to cook, noodles are a staple Asian food—and it’s no wonder! Try these fast, flavoursome ideas.
1. Chicken-satay noodles
Make an easy peanut sauce by mixing peanut butter, sweet chilli sauce, reduced-salt soy sauce and a little water; microwave for 1 minute. Stir sauce through cooked rice noodles with crisp vegetables and stir-fried chicken.
2. Tasty noodle cakes
Add broken-up cooked egg noodles to beaten egg and sweet corn kernels. Chop lean bacon or ham, spring onions and capsicum; add to noodle mixture. Cook spoonfuls in a hot pan to make fritter-like cakes.
3. Chilled Japanese tuna-noodle salad
Cook soba noodles according to packet instructions and set aside to cool. Toss shelled cooked edamame (soybeans), sliced ginger, red capsicum, baby spinach and sesame seeds. Dress salad with a mixture of sesame oil, lemon juice and a dash of mirin. Chill salad until ready to eat, then toss a drained can of tuna through noodle salad.
4. Salmon-miso noodle soup
Cook udon noodles according to packet instructions. Prepare miso soup according to packet instructions. Add spinach, carrot sticks and mushrooms to miso and cook until vegies are tender. Sear salmon fillets in a hot pan for 2 minutes; remove and thinly slice. Combine udon noodles and soup, then top with salmon, wasabi and sesame seeds.
5. Thai noodle salad
Combine grated carrot with peeled ribbons of cucumber and zucchini in a bowl. Add sliced capsicum and cherry tomatoes to bowl. Toss all vegetables with cooked vermicelli noodles. Dress salad with a combination of lime or lemon juice, fish sauce, brown sugar and chilli flakes. Top salad with strips of cooked salmon or beef and serve.
6. Noodle frittata
Choose a favourite frittata recipe and swap cooked noodles of your choice for the potatoes. (To make handling easier, chop noodles into short lengths before cooking them.)
