Spiced pumpkin wedges with craisins and feta
Step 1 Cut pumpkin and onions into thin wedges. Place onto a tray lined with baking paper. Spray with oil. Combine some paprika and cumin and sprinkle evenly over vegies. Roast for about 30 minutes, or until golden and tender. Sprinkle with craisins and a little feta to serve.
Asian cucumber amd snow pea salad
Step 1 Blanch snow peas until tender-crisp, then refresh. Peel cucumbers into ribbons. Place peas, cucumber and chopped eschalots into a bowl.
Step 2 Combine equal parts reduced-salt soy sauce and vinegar with a sliced chilli and a little caster sugar. Toss through salad to serve.
Warm beans amd broccoli with pesto
Step 1 Steam a large cup of trimmed beans and broccoli until tender-crisp. Transfer into a large bowl. Add a dollop of basil pesto and toss to combine.
Step 2 Season with some freshly-ground black pepper. Serve vegies garnished with a sprinkle of toasted pine nuts.
