Chargrilled corn, tomato and spinach salad
Spray corn on the cob with oil and chargrill until tender. Carefully cut kernels from cob. Toss with halved cherry tomatoes, baby spinach leaves, lime juice and a small drizzle of olive oil.
Zesty zucchini with peas
Cook zucchini, squash and peas in a saucepan of boiling water until tender. Drain well. Add lemon zest, juice and a little olive oil. Season with ground black pepper, toss to combine and serve immediately.
Grilled eggplant and capsicum salad with yoghurt dressing
Chargrill slices of eggplant and red capsicum until golden and tender. Toss with flat-leaf parsley leaves. Drizzle with low-fat natural yoghurt and lemon juice.
