Pop a potato in it!
Just because the weather’s warming up doesn’t mean we have to ditch our beloved potatoes. Delight potatoes are readily available and perfect for using in a range of summer meals. Golden Delights are great for roasting, while Red Delights are lovely for using in salads or baked – try them thinly sliced on a pizza!
Cream Delights have yellow flesh which packs a huge flavour punch and they’re great for making summer-style mash with a little reduced-fat feta, chopped fresh herbs and red onion.
All the Delights are great for boiling, making them ideal for slicing and using in salads – from green to potato-based salads.
Try Table of Plenty’s yummy new dukkah flavour, lemon and herb. It’s made from almonds with dried and ground lemon, as well as basil, sumac and coriander. Use it as a tasty dukkah dip for crusty bread, or to crumb grilled fish or chicken, or sprinkle it over salads for a little extra oomph. RRP $3.49.
Take me to the tropics
A fruit that tastes like sweet caramel and vanilla? Yes please! The tropical Abiu originates from Brazil and is now grown in Far North Queensland. Round to oval-shaped, with smooth, yellow skin, the Abiu has creamy white flesh when ripe. Just cut in half and scoop out the flesh for a snack. Or, add to fruit salad (just brush with a little lemon juice to stop the flesh discolouring). Look for Abiu that are yellow and firm. There should also be a hint of green close to the stem. Choose fruits that are free from blemishes or bruises. Store Abiu in the fridge for up to a week.
