Stone fruit is in season, and the lush peach is one of the loveliest. As Sprout shows us, peaches perfect all kinds of dishes, making them ripe for the cooking all day long!
Sweet and low
Peaches are the perfect summer snack. Low in kilojoules and high in fibre, they’re satisfying and sweet. But their delicious taste doesn’t mean they’re full of sugar. Peaches have a low glycaemic index (GI), so they don’t behave like a refined carbohydrate in the body. One medium peach is equivalent to one serve of carbohydrate, making this versatile fruit a valuable source of long-lasting energy.
Have you seen doughnut peaches? Looking much like their namesake, they taste similar to white peaches, which are sweeter than the yellow variety. Find them at small greengrocers and farmers’ markets.
In season from October to April, peaches offer two types of texture. The flesh of clingstone peaches literally clings to the stone, and they’re softer and juicer. Slipstone peaches feel firmer, and they’re easier to eat by hand. Why not try both?
