A. Accredited Practising Dietitian Jemma O’Hanlon says:
“A staple food in Latin America and parts of Asia and Africa, polenta comes from corn and is a rich source of carbohydrates. Polenta can fit in as part of a healthy weight-loss diet, it’s just important to be mindful of the portion served. Aim for a serve no more than a quarter of your plate and remember to serve your meal with plenty of vegies or salad (at least half of your plate). Use reduced-salt stock when cooking polenta, and don’t be afraid to refrigerate or freeze leftovers as a small amount often goes a long way. Cooking and cooling polenta also produces a type of dietary fibre called resistant starch, which can help to reduce the risk of bowel cancer. Bonus!”
