Leftover chicken? Simply shred it, and turn it into another meal with these great ideas.
1. Chinese chicken salad
For an easy and delicious salad, toss together shredded red and green cabbage, grated carrot, toasted sesame seeds, chopped coriander, a finely chopped chilli and shredded chicken. Splash on a ginger-soy salad dressing and garnish with fried noodles.
2. Spicy Thai wraps
Combine a small handful of shredded chicken with some light mayonnaise and 1/2 teaspoon of curry paste and spread on a tortilla. Top with tomato, bean sprouts, cucumber, lettuce, capsicum, and coriander or basil and roll up.
Make an Asian noodle dish by combining cooked vermicelli noodles, a handful of shredded chicken, sweet chilli sauce, finely chopped chilli, coriander, roasted peanuts, and a dash of lime juice.
4. Protein power
Whip up a protein-packed salad for lunch. Combine couscous, chickpeas, shredded chicken, chopped tomatoes and celery together in a bowl. Top it with olive oil and lemon juice and serve with a wholegrain bread roll. Or wrap it all up in a piece of lavash bread or wholemeal tortilla.
5. Barbecue chicken pizza
A new pizza flavour the whole family will love! Combine shredded chicken with barbecue sauce in a bowl and set aside. Top a pizza base with a little more barbecue sauce, chopped tomatoes, thinly sliced red onion, mozzarella cheese, coriander and chicken. Cook for 10–12 minutes, or until the cheese is bubbling.
6. Chicken chowder
Cook 3 slices of lean bacon and set aside. Sauté 1 chopped onion, then stir in 2 tablespoons flour. Add 1 cup low-fat milk, grated potato and a cup of corn (creamed or kernels). Bring to the boil, then simmer 10 minutes. Stir in chopped bacon and a large handful of shredded chicken. Heat through before serving.
7. Pasta bake
Add shredded chicken to your next pasta bake or pasta dish to add protein and more flavour.
8. Cheesy chicken sambos
Kick up the flavour of a cheese and tomato sandwich by adding shredded chicken mixed with a dollop of light mayo and cracked pepper.
9. Snappy party snacks
At your next party, wow your guests with this delicious canape: Top savoury biscuits or baked pita chips with spoonfuls of shredded chicken mixed with sun-dried tomato pesto. Sprinkle with crumbled feta and chopped basil.
10. Chicken quesdillas
Quesadillas make a great snack or a light meal. Scatter shredded chicken, cheese and diced capsicum onto a tortilla and top with another tortilla. Cook in a frying pan over medium heat for a couple of minutes on each side, until the cheese has melted. Serve with low-fat sour cream.
