Michelle Fragoso has 10 delicious reasons to keep tinned corn in your pantry.
1. Fritter delights
You can’t go wrong with corn fritters! Whisk together 1 cup flour, 1 cup low-fat milk and 2 eggs. Stir in 1 tin each of corn kernels and creamed corn and add vegies like chopped, cooked potato, peas, grated carrot, and green onions. Fry each side until golden.
2. Rice salad
For a light, tasty meal, combine cooked brown rice, corn kernels, chickpeas, chopped roasted capsicum and parsley. Drizzle with olive oil and lemon juice and season with pepper.
3. Meatloaf munchies
For a simple way to get more vegies into your diet, add a can of drained corn kernels to your next meatloaf. It adds flavour, texture and fibre to every bite, without adding fat.
4. Rolled up
Did you know that corn can be a great addition to sushi? Use kernels or creamed corn (with chicken or avocado) in your next sushi roll for a new twist.
5. Pie surprise
Add corn kernels to your next pie for more substance, whether it’s a shepherd’s pie, meat pie, vegetable pie or even pizza pie!
6. Corn mash
Next time you make mashed potatoes, add a can of corn kernels halfway through mashing. They mix well with the potatoes, but as they don’t get too mashed, they add great texture.
7. Simple soup
Make a simple chicken and corn soup: boil 500mL of chicken stock, then add 1 finely sliced chicken breast and simmer. Add a 420g can of corn kernels and simmer for 10 minutes, or until chicken is cooked. Pour in 1 whisked egg and 3 chopped green onions; cook for 2 minutes. Add a bit of sesame oil and garnish with sliced green onion.
8. Stuffed potatoes
For a great side dish, scoop out the flesh of baked potatoes and mix with creamed corn, low-fat natural yoghurt, chopped low-fat ham and finely chopped green onion. Spoon mixture back into the jacket and serve.
9. Creamy choice
Make a creamier, tastier risotto by adding a can of creamed corn when the last ladle of stock is almost absorbed. This goes especially well with chicken or vegetable risotto.
10. Pockets, please
For a quick light meal or snack, combine a small can of corn with tuna, cottage cheese and chopped chives. Slice open a pita pocket and fill with mixture.
