A: Chef and food journalist Scott Watkins-Sully responds:
“Gammon is made using a traditional British method of wet-curing pork. It’s similar to ham, but most hams are smoked and ready to eat, whereas gammon is pickled and needs to be cooked prior to eating. There aren’t many places in Australia that readily sell gammon, but a good butcher should be able to prepare it if you provide him or her with an appropriate recipe. It’s quite salty, so eat in moderation!”
