Instructions and steps: 

Step 1 Preheat oven to 230°C. Line 2 baking trays with baking paper and place bases onto trays. Sprinkle each base evenly with 2 tablespoons cheese.

Step 2 Spray a saucepan with oil and cook bacon over high heat, stirring, for 2 minutes. Stir in rosemary and garlic to coat. Remove from pan.

Step 3 Add potatoes to pan. Cook, turning, for 5 minutes, or until lightly browned. Add cup cold water to pan and cover. Cook for 5 minutes, or until potatoes are just tender and liquid is absorbed. Remove from heat.

Step 4 Layer potato slices over bases. Top with bacon and remaining cheese. Bake for 10 minutes or until bases are golden and cheese melts. Cut pizzas into slices. Serve with salad and, if desired, chopped fresh herbs.

Variations

For a vegetarian option, replace the bacon with sliced mushrooms or roasted capsicum. Feta and capers add a gourmet touch.
