Instructions and steps:
Step 1 Sift flour, sugar and cinnamon into a large bowl. Whisk in milk and egg until smooth.
Step 2 Spray a frying pan with oil. Drop 2 tablespoons of batter into pan. Top with 3 slices of banana. Cook over medium heat for 1–2 minutes, until bubbles appear on surface. Flip and cook for another 1–2 minutes. Repeat process to make 8 pikelets. Serve with ice-cream.
Variations
Make it dairy-free: Use soy milk and soy ice-cream.
