Volcano with lava (turmeric chicken with mashed potato)
This is a really simple recipe with a mild flavour that's very quick to make. Try adding paprika 'embers' for a bit of extra colour.
Instructions
Peel and boil potatoes, then mash.
Cut chicken into bite-sized pieces. Simmer chicken gently in chicken stock. Once cooked through (7-10 minutes), add turmeric and 3 tablespoons of lite cream cheese to make a sauce (adjust turmeric for colour and flavour).
Stir-fry or microwave veges.
To assemble:
Make a mashed potato mountain, spoon chicken into the middle and pour the yellow sauce over the top, put veges around the 'volcano'.
