Beef and vege udon noodle soup

This dish works well with any cut of beef, and is also nice with chicken - use chicken stock and stir-fry chicken pieces instead.

Instructions

Finely slice the eye fillet.

Bring the stock to the boil, add the noodles, vegetables and beef and quickly bring back to the boil.

Remove from the heat immediately and serve with soy sauce and fresh coriander to taste.
