Strawberry compote
Nothing says 'summer's coming' like the first strawberries. As well as being a sweet treat, strawberries are a good source of vitamin C and fibre.
Instructions
Remove stalks and halve large strawberries (leave small ones whole).
Combine water, juice and sugar in a large pot over a moderate heat. Stir until sugar is dissolved.
Add strawberries and lemon zest, and heat gently just until the berries start to release their juice. Remove from the heat and set aside in a bowl to cool.
