Parmesan and oat biscuits
We used organic porridge oats in this recipe, but there are some lovely plain rolled oats available out there to try.
Instructions
Step 1 Preheat oven to 200°C. Line a baking tray with baking paper.
Step 2 Mix all dry ingredients together with 1 tablespoon of parmesan. Cut in butter and mix well (use a food processor if you have one).
Step 3 Beat egg into milk and mix with dry ingredients until a dough forms. Roll out and cut into 5cm rounds with a cookie cutter. Lay on baking tray and sprinkle with remaining parmesan.
Step 4 Bake for 10 minutes and cool on a rack. Store in an airtight container. Serve with tomato soup or sliced firm pears.
Variations
These work just as well with any firm cheese like cheddar or edam.

Oats contain gluten, but are considered safe for most Coeliacs. Unless you have a particular sensitivity, you should be able to enjoy moderate amounts (40-60g per day).
