Green sauce for pasta
Turn lightly steamed spinach into a beautiful, bright green pesto-like sauce for pasta.
Instructions
Wash the spinach, shake off as much excess water as possible and strip the leaves from the stems. Steam the leaves to just wilted, together with the garlic. This takes about 3 minutes.
Combine the steamed mix with basil leaves, salt, pepper and olive oil, then whiz with a hand-held stick blender or in a food processor.
Toss with the cooked pasta and sprinkle with parmesan and pine nuts. Any leftover sauce makes a great spread with crackers and cheese.
