Fruit loaf
This is the perfect morning tea loaf with a cup of tea. And the cinnamon amount isn't a typo, it really works!
Instructions
Preheat oven to 180°C. Line a loaf pan with baking paper.
Place carrot, apricots, sultanas, apple, juices, water and sugar in a medium saucepan. Bring to the boil then simmer uncovered for 15 minutes. Cool to room temperature.
Stir in the sifted dry ingredients and banana. Spread mixture into a loaf tin and bake for 1 hour.

- 1 medium apple, peeled and chopped
- 1/4 cup apple juice

- 1 cup self-raising flour
- 1/2 cup plain flour
- 1 teaspoon baking soda
- 3 teaspoons ground cinnamon
- 2 medium bananas, sliced thinly
