Cauliflower soup
Cauliflower is sometimes seen as a bit of a poor relation, but it's cheap and really delicious.
Instructions
Chop a cauliflower into even-sized pieces.
Fry an onion in a little oil in a large pot, add the cauliflower and chicken stock or water and simmer, covered, until tender.
Whiz with a stick blender until smooth.
Top with a little crumbled blue cheese or parmesan.

Try cauliflower roasted with a little olive oil in the oven, or steamed and mashed like potato with parmesan, olive oil and salt & pepper.
