Barbecued courgettes with garlic and mozzarella

Courgettes (or zucchini) are versatile and delicious summer veges, which contain good amounts of vitamin C, folate and fibre.

Instructions

Step 1 Slice courgettes thinly lengthwise, and slice onion into thin slices. Chop garlic roughly.

Step 2 Heat barbecue grill to a medium heat, and toss on veges. Keep them moving around for a few minutes, until courgettes and onions soften. Turn barbecue off and leave to cool for a few minutes. Then add mozzarella slices and toss everything together with tongs, so mozzarella melts slightly.

Step 3 Garnish with salt and pepper, and serve straight away as a side dish with barbecued meat or fish.
