Banana muffins
Everyone loves banana muffins; try making them in mini-muffin tins - they make a great addition to lunchboxes.
Instructions
Mash bananas. Beat egg and add to banana. Add milk and juice.
Sift flours, cinnamon and baking powder. Fold flours into banana and liquid. Mix gently.
Spoon into greased muffin tins. Bake at 210°C for about 20 minutes, until lightly brown. Turn out and cool.

- 1 cup white self-raising flour
- 1 cup wholemeal self-raising flour

- 1/2 teaspoon baking powder
