Prawn kebabs with lemon parsley couscous
Serve this with steamed green beans or asparagus or a green salad. Mmmmm.
Instructions
Boil the jug and place the couscous in a glass bowl. Just cover the couscous with boiling water, put a plate over the top of the bowl and set aside for 10 minutes.
Heat a frying pan, griddle pan or barbecue with a spray of oil. Cook the kebabs briefly until done to your liking (no longer than 8 minutes).
Chop the parsley, zest the lemon (or grate the rind with a grater) and toss the parsley and lemon through the couscous with a fork.
Serve with a nice glass of chardonnay.
