Mediterranean-style potato salad
This salad is a great meal by itself! Use the dressing given, or use your favourite bought one.
Instructions
Step 1 Scrub potatoes and microwave, steam, boil or bake whole. Slice into thick wedges while still warm.
Step 2 Place potato, tomatoes, cheese, onion, salami, capsicum and parsley on serving plates.
Step 3 Blend oil, vinegar and sugar together. Pour over salad. Serve hot, warm or cold.
Variation
Add some pesto sauce to the vinaigrette if you want.

- 4 tomatoes, sliced into wedges
- 1 small red onion, skinned and cut into rings
- 3 capsicums, roasted (see below for roasting instructions)
- 100g feta cheese, cubed
- 1/2 cup olives
- 8-10 slices salami
- 1/2 cup finely chopped fresh parsley
- 1/4 cup oil
- 2 tablespoons red wine vinegar or lemon juice
- 1 teaspoon sugar
