Rocket, white bean, squid and chorizo salad
This salad is delicious, incredibly simple and super-quick.
Instructions
Warm the cannellini beans with the lemon zest, olive oil, garlic and red onion.
Meanwhile, barbecue or pan-fry a couple of chorizo sausages and the squid. Slice the cooked chorizo.
Toss all the ingredients together with the rocket leaves, a good squeeze of lemon juice, a drizzle of olive oil and enjoy hot or cold.
Enjoy hot or cold as a light meal or as part of a lunch platter.
