If you’ve eaten Japanese lately you may have eaten seaweed-encased sushi, or even a seaweed salad, and wondered about the nutritional value of this food we’re not so familiar with.
While there are different varieties, overall edible seaweeds have been shown to be high in essential vitamins and minerals as well as adding fibre.
Seaweed has been described as an ideal food-safe natural source of iodine, a mineral many New Zealanders could consume more of in their diets (but one we are cautioned against supplementing due to its toxicity at high levels). Seaweed is rich in iron and magnesium, and contains calcium and potassium.
