What to do with: Beetroot
With its gorgeous colour and antioxidant punch, here are our favourite ways to use this star vege.
- Roast it in the oven whole, or in chunks, and add to winter salads.
- Grate raw beetroot (use disposable gloves to avoid staining your hands) and make a salad with grated carrot, apple, walnuts and blue cheese.

Gently boil beetroot and serve with a dressing made from yoghurt, lemon rind and juice.

Make a salad of beetroot leaves and finely sliced raw beetroot with orange slices, pistachio nuts and a mustard vinaigrette.
- Use a potato peeler to slice thin ribbons of beetroot. Gently stir-fry in sesame oil with a few sunflower and sesame seeds and some finely sliced ginger.
