Vege cooking linked to tooth decay
Cooking vegetables in particular ways can make them as acidic as fizzy drinks, leading to dental erosion, according to UK scientists.
Researchers made the discovery while experimenting with the vegetarian dish ratatouille. They found that oven-roasting significantly increased the acidity of vegetables such as green peppers, aubergines (eggplant) and courgettes (zucchini). Tomatoes and onions were not affected, but red peppers became more acidic when stewed.
Varying cooking methods to include steaming and stir-frying is good advice to protect teeth.
